
Pick me up Potato Bread!

Some days are meant for baking and with this cold wind coming from the East, there is really only one thing for it and that my friends, is to FEAST!
This is my easy go-to no-knead recipe for a delicious potato bread. This recipe can pretty much be adapted to any store cupboard ingredients and is jolly good warm from the oven.




175g Self Raising Flour
1 Teaspoon of Pink Himalayan salt or sea salt
1 (heaped) teaspoon of baking powder
a pinch of smoked paprika
A sprig of Rosemary or thyme
110g cubed feta (or soft goats cheese)
1 Medium Potato (175g)
4 Spring Onions
1 garlic clove (optional)
1 egg (large)
2 tbs milk
1tsp of wholegrain mustard



Sift the flour, salt, baking powder, paprika, a good pinch of black pepper & herbs with a palette knife.
Peel the potato & coarse grate it into the flour. Add the finely sliced spring onions, garlic and cheese, mix thoroughly.
Beat the egg, milk and mustard together in a separate bowl then mix with the flour until it forms a dough with your hands
(add a little flour at this stage if it is too sticky, but this is a fairly wet dough)
Preheat the oven to 180C Fan & bake for 40-45 mins until golden brown.

Voila!


Serve warm with salad or homemade soup
